Hi Karl,
This is currently not possible, but I agree, it would be nice to have this
possibility. The implementation of the algorithm would require a cut
machinery with a plane, or better a box and if possible this cut plane
or box following the mouse.
The only supported drawing options for 3-d histograms are: scatter-plot
and the 3-d box with size proportional to the cell content.

You can generate 2-d projections of your 3-d histogram and plot these
projections
with the colz option.
