OK, so this behavior is the 'normal' one. I had been used to the
previous one, that better fitted(!) my needs:
Fit with option '0' didnt draw anything, so I could have a method to fit
my spectra and computing values etc. Without this option, the Fit()
method *immediatly* perform a 'Draw()' of the histogram, which I dont
want (because i'm computing not displaying at this time).

But next, when in a display method I do a hist->Draw() the fitted
function appeared naturally.

Now I think I have to manually loop over the functions and expicitly
draw it.
